Recently I got a coupon for some Ore-Ida tater tots. They came in the #Jinglevoxbox I received from Influenster. I went to Walmart and got a free bag.
I was asked to come up with a recipe using the tater tots. I don't know about you but until now I never thought of using tatertots in any other way but then cooking as is in the oven.
But guess what you can!
Here is the simple recipe I came up with. And that is because I didn't have many ingredients in the house at the time. Which is cool anyway, because that means you can come up with something with only a few ingredients.
egg, cheese tater tot surprise casserole:
layered some Ore-Ida tater tots on bottom of a 2.5 qt casserole dish (coat with cooking spray)
3 to 4 eggs some salt & pepper and thyme to taste - beat all these together with fork.
a small amount of chopped onion - add that to egg mixture
at this point I felt needed more liquid so being me I didn't have any milk in the house so I added some half and half to the eggs.
pour egg mixture on top of tater tots
of course I didn't have any shredded cheese right then, so I placed 2 slices of cheese on top of that.
bake at 425 (or in my case at 450 because my oven doesn't heat up properly) for 30-45 min
this is what i got when taken out of oven
This was delicious actually and my son and I enjoyed it the other day for a surprise breakfast.
