My son is in 7th grade this year. I can't believe it, he is growing up so fast! His first trimester he is taking cooking class. I can't believe that either, that seems so grown up.
But anyway he seems to be really enjoying the cooking class. He has always shown an interest in cooking anyway. When we go camping he likes to help do some of the cooking. So in his class last week they made a 7 Layer Dip. He came home with the recipe and really wanted to try to make it himself.
We actually had the perfect opportunity to do that, this past Sunday. My sister and brother-in-law came up to visit Sunday. So he decided to make it for them on that day. I went to the store the day before to get the ingredients. And he put it together Sunday morning. He made it all by himself! (Well virtually all by himself, with a little help.)
The dip came out great! And when he served it, everyone seemed to really like it. As evidence by the fact that it was pretty much eaten up quick. I'm very proud of my son, for trying new things, and being interested in cooking. Which is a great skill to have. Who knows maybe someday he can cook a whole meal for us!
Here's the recipe for 7 Layer Dip:
1 1/4 C refried beans
1 avocado (mashed)
1 1/2 tbsp lime or lemon juice
3/4 cup sour cream
1/2 tbsp taco seasoning mix
1 seeded, diced tomato
1/8 C sliced black olives
1/4 C green onions sliced
1 1/8 C shredded cheese
In casserole dish or pie plate, layer refried beans. Mash and add lime juice to mashed avocado, layer. Combine sour cream and taco seasoning mix, spread for next layer. Spread tomatoes for next layer, then drained black olives. Chop green onions and spread over olive layer. Finish with shredded cheese, and serve with tortilla chips.
